Easy Peasy Glutenfree Rhubarb Apple Crumble

Easter Sunday left me with loads of rhubarb donated by dear grandad and even more just-about-to-go-off apples brought by grandma. So definitely a reason to do a crumble- not that I needed a reason, but it just feels better this way :-).
Okay, so here we go. For four greedy (that would be me) or six normal or eight frugal people you need:

500gr rhubarb and 500gr apples (or pears or cherries or plums or…whatever you want to crumble upon)

150-200gr brown sugar (depending on your taste and sourness of the chosen fruit)

100gr oatmeal

100gr of any ground nuts, I used ground hazelnuts

120gr soft butter

Preheat oven to 180°C. Wash apples and rhubarb. Peel the rhubarb and cut out apple cores (if you wanDSC02216t, you can peel the apples, too). Cut everything into 1-2cm pieces and spread out in a casserole (mine is 25x35cm). Sprinkle 2 tablespoons of the sugar over the cut fruit ( rhubarb is not a fruit, is it?). You could also add cinnamon or ground ginger to taste.

 

In a bowl, mix oatmeal and ground nuts, add the soft butter and knead DSC02217until a homogeneous dough is created. Add the sugar, knead again until it is evenly absorbed. Break the dough into crumbles and sprinkle it over apples and rhubarb.

This glutenfree version will have smaller crumbles than the classic version. if you prefer that, simply replace oatmeal and nuts with 200gr of flour.

Put everything in the oven, wait 30-45 Minutes, depending on your taste and appliance.
